CHAI
The name Chai refers to tea in many countries. In the USA it is used as a name for teas blended with spices. The most common spices that are used are - Cardamom, Ginger, Cinnamon and Cloves. Other spices are Anise, Fennel, Pepper etc. Our Chai blends are blended using fresh spices from Sri Lanka, a country famous for spices. Westerners, namely the Portugese, Dutch and British seafarers arrived in Sri Lanka mainly for these spices. Chai is best prepared with honey and milk. Use 4 grams of Chai (2 teaspoons) in 6 ounces of water and steep for 5-6 minutes at 212 F. Strain the tea leaves and spices out using a tea strainer. If you use a basket infuser of a tea filter this is not necessary. Mix a generous portion of honey while the tea is still hot. Add milk or soya. Also delicious when chilled.
